It undergoes a complex anaerobic washed process, including fermentation with the cherry intact, a secondary 48-hour fermentation after pulping, and a thermal shock washing technique. This meticulous processing results in a vibrant and elegant cup with flavor notes of peach tea, nectarine, and floral characteristics, offering a smooth mouthfeel and a lingering finish.
