About This Coffee

This decaffeinated coffee is from Granja El Paraíso-92, a family-owned farm in Piendamó, Cauca region, Colombia, near the Puracé Volcano at 1950 meters altitude. The farm is owned by Wilton Benitez, who applies his chemical engineering expertise to innovative coffee cultivation and processing methods. The coffee undergoes a complex thermal shock fermentation process involving three rounds of fermentation: 52 hours anaerobic in cherry at 18°C with yeast, 48 hours anaerobic in mucilage at 21°C, and 68 hours aerobic fermentation. It is then washed using thermal shock (40°C then 12°C water) and dried for 48 hours at 38°C. The coffee is naturally decaffeinated using the E.A. or Sugarcane method. The volcanic soil and high thermal amplitude (13-32°C) contribute to longer maturation times and higher sugar content. Suitable for filter, immersion, or espresso brewing.
