Assembly Coffee

About This Coffee

This coffee is a Pink Bourbon variety from the Huila region of Colombia. Pink Bourbon is a natural hybrid of Red and Yellow Bourbon varieties, discovered in the mountains of Huila around twenty years ago. The coffee was processed using a honey washed method where the cherry mucilage remained throughout 48 hours of controlled fermentation. This results in a silky, sweet flavor profile with distinctive florality, clarity, and complexity. Suitable for both espresso and filter brewing.
