This single-origin coffee is from El Bosquecito, a 1.5-hectare farm in Sevilla, San Agustín, Huila, Colombia, located at 1,900 meters altitude. The farm is operated by Freddy Humberto Ortega Muñoz alongside his father and sister. The coffee features Pink Bourbon variety (Bourbon Rosado), a pink-fruited mutation of Bourbon, with 1,700 trees cultivated on the farm. The coffee is washed processed: fully ripe cherries rest 12 hours, then are depulped and fermented in tanks for 36 hours before washing. Drying occurs on raised beds under plastic roofing for 8-15 days, with beans rested 8-15 days post-drying. Flavor notes include raspberry, blackberry, and orange pekoe tea with a complex, expressive profile.
