About This Coffee

El Mirador is a 32-hectare farm located in the El Portal village near the Pompeii Reserve in the Magdalena River valley, operated by Elkin Guzman, who has been producing coffee for over 70 years. The farm is planted with exotic varieties including Catiope, Mokka, Tabi, Geisha, Orange, Striped, and Pink Bourbon. This coffee is processed using washed carbonic maceration, a two-stage fermentation process where cherries ferment in airtight containers with carbon dioxide for 70 hours, followed by an additional 70-94 hours of fermentation. The beans are then washed and sun-dried for 18-22 days. The coffee features intense fruit notes with sweet and full body.
