A Castillo variety coffee from Finca El Paraiso Cauca, located in Piendamo, Cauca, Colombia, at 1850 meters above sea level. Produced by Diego Samuel Bermudez, it undergoes an extended anaerobic lactic acid fermentation process with thermal shock washing. The process involves staged fermentation at 18°C and 21°C using an anaerobic bioreactor, followed by cold-water washing to fix secondary aromas and controlled drying. Tasting notes include lychee, nectarine, watermelon, strawberry, and oolong tea.
