This single-origin Colombian coffee from Finca El Paraiso in Cauca, grown at 1950 meters altitude, features the Castillo varietal. Produced by Diego Bermudez, this coffee underwent a distinctive 36-hour anaerobic fermentation in cherry followed by 12-hour secondary fermentation with specific microorganisms, thermal shock treatment, and dehumidifier drying. The processing creates vibrant flavors of peach, lychee, apple, pear, and caramel with a creamy body and long fruity aftertaste. The coffee scored 93 points.
Geoff Polci, a certified Q Grader whose coffee journey spans two decades, founded Stereo Coffee Roasters in Toronto in June 2018. Polci first roasted coffee in 2004 at a restaurant in Costa Rica and went on to run a series of cafes and co own another roasting company before launching Stereo.
