This Colombian coffee is from Finca Los Nogales, processed in collaboration with Cata Export. The lot uses a 72-hour oxidation in the cherry for early flavour development, followed by pulping with mucilage intact and a 36-hour anaerobic fermentation. A light wash removes some mucilage before drying. The result is a decadent cup with rich, jammy notes.
