This Colombian coffee is grown and processed at Finca Los Nogales in collaboration with Cata Export. The processing method begins with a 72-hour oxidation in the cherry, followed by pulping with mucilage left intact. The coffee then undergoes a 36-hour anaerobic fermentation in sealed tanks. A light wash removes some mucilage before drying. The result is a decadent cup with rich, jammy notes.
