This coffee is from Finca Santuario estate in the Cauca region of Colombia, grown at 1,950-2,050 meters altitude. The coffee is Red Bourbon variety, processed using natural (dry) method with anaerobic fermentation. Cherries are harvested at Brix 22° or higher, soaked in clean water for 3 hours, then undergo anaerobic fermentation for 8 hours in sealed containers. The cherries are then sun-dried on African raised beds for approximately 23 days at 32-34°C until moisture content reaches 10.5%. This coffee scored 95 points in Coffee Review. Tasting notes include orange blossom, peach, mango jam, wine-soaked cherry, and fruit gummies, with juicy characteristics and full body. The roast level is medium-light.
