This decaffeinated coffee comes from the Nariño region of Colombia, sourced from the Promotora Cafe de Altura cooperative. The cooperative works with over 300 smallholder farmers whose farms climb the slopes around the city of Buesaco, near the Galeras volcano. Coffee is typically harvested year-round in this region. The cooperative pays premiums above market price based on quality and encourages sustainable farming practices. This decaf is processed using the sugar cane process, also known as the Ethyl Acetate (EA) method. The coffee features flavor notes of caramel, milk chocolate, and light fruitiness. It is lightly and carefully roasted, though the beans appear darker visually due to the decaffeination process.
