This Gesha from César Augusto in Los Mangos, Tolima (Colombia) is a single-origin Gesha cultivar processed with an extended, multi-day fermentation that includes staged depulping, sealed resting periods, and slow drying. The cup is delicate and precise with jasmine-like florals, clean apricot tones, bright white-peach/nectarine notes, a silky tea-like body, and a lingering finish of fruit and raw honey. Roast level: Light.

Founder Tim Coonan, a former chef with experience in prestigious kitchens around the world, started Big Shoulders Coffee in his garage about a decade ago.
