Processed using Acid Anaerobic Fermentation with Yeast and Thermal Shock, utilizing bioreactors and specific micro-organisms to control fermentation parameters such as temperature, pH, Brix value, and electrical conductivity. Tasting notes include strawberry shortcake, vanilla, yellow peach, yoghurt, lime, and elderflower, with a soft acidity and a fragrant, floral finish.
