This coffee is from Huila, Colombia, produced by fourth-generation producer Rodrigo Sanchez at 1,730 meters altitude. The variety is Purple Caturra. It undergoes a unique "Citric Natural" processing method involving fermentation with citric acid, citrus oranges, tangerines, lemongrass, and brown sugar for 190 hours, followed by an additional 150 hours of controlled fermentation in sealed tanks monitoring sugar content and pH. The result is a coffee with distinctive flavor notes of lemongrass, coconut, lime, sweetness, and spice, with refreshing citrus characteristics derived from the innovative processing technique.
