About This Coffee

This specialty coffee is a Gesha variety from the Nariño region of Colombia, grown at an altitude of 1950 meters on volcanic soil. Produced by Huver Castillo at the El Paseo farm, the beans undergo a 20-hour pre-fermentation followed by 210 hours of anaerobic fermentation in steel tanks with sugarcane juice and hops. The coffee is dried on patios and stabilized for 30 days. It features a complex flavor profile with notes of jasmine, lychee, and ripe peach, characterized by high citrus acidity and a long, floral finish.
