This Colombian coffee from producer Jhoan Vergara features the Chiroso variety. The coffee undergoes an extensive experimental processing method that begins as a washed process but includes: 16-hour cherry oxidation, 38-hour anaerobic fermentation in sealed tanks, 12-hour bean and mucilage oxidation, 24-hour fermentation with coffee mosto, and thermal shock washing with hot then cold water. The complex processing creates flavor notes of sweet baking spices and stewed fruit with a smooth, buttery mouthfeel and syrupy texture.
