This coffee is produced by Diofanor Ruiz at his farm, La Divisa, located in Buenavista, Quindio, Colombia, at an altitude of 1600-2000 meters. The coffee is of the Papayo variety, a natural mutation known for its resilience and complex profile. It undergoes a 45-hour aerobic fermentation followed by a natural drying process on parabolic dryers. The resulting cup is characterized by intense fruitiness and sweetness, with distinct flavor notes of watermelon candy, papaya, and cacao nibs.
