This Colombian coffee is produced by Cesar Buesaquillo on La Esmeralda farm in Buenavista, Quindio region. The farm spans 6 hectares at 1800 meters altitude. The coffee was carefully hand-picked to select only the ripest cherries, then hand-sorted to remove any defects. It was sun-dried on raised beds in temperature-controlled conditions until ideal moisture content was achieved. The Castillo variety was developed by the National Federation of Coffee Growers and is more productive than Caturra while resistant to coffee leaf rust. This natural processed coffee features tasting notes of red grape, blackcurrant, tangerine, dark chocolate, and caramel. Cup score of 87.5.
