The coffee is 100% Caturra variety, which originated in Minas Gerais, Brazil as a natural mutation of Red Bourbon. This is a washed coffee that underwent 30 hours of underwater fermentation before being pulped and gently washed, then dried in temperature-controlled conditions. The cup profile shows high sweetness, high acidity, and juicy characteristics with flavors of lime, stone fruit, and brown sugar.
