About This Coffee

La Leona Luz is a microlot from the La Leona farm produced by Luz Helena Salazar in Armenia, Quindío, Colombia. The farm is located at 1,450-1,500 meters altitude where Caturra and Pink Bourbon varieties are cultivated. This lot features Caturra variety processed using a washed method with careful selection. Only ripe cherries are hand-picked, floated, and manually sorted to remove defects. The cherries are fermented for 30 hours under water to enhance cleanliness and structure, then depulped, gently washed, and dried in controlled conditions. The coffee scored 87.25 points and presents flavor notes of panela, apricot, lime, and chocolate with a clean and precise profile. Roasted by Monkee Koffee as their second in-house roasted coffee.

Monkee Koffee

Opened in late 2014 by Oscar Gonzalez and Salvador Figueros, Monkee Koffee was among Madrid's earliest specialty coffee spaces. The founders came from careers in TV and marketing, and drew inspiration from roasters like Blue Bottle and Panther Coffee in Miami. The shop landed in an untrendy, residential corner of the Chamberi district and set about building a local audience for a style of coffee drinking that barely existed in Madrid at the time. For years, Monkee sourced its beans from Spanish micro roasters including Puchero and others, with baristas certified by the SCA. In 2025, the operation began roasting in house from selected small producers. Monkee's identity leans as much on atmosphere and community as on the coffee itself, with weekend brunches, a communal table culture, and a deliberate effort to make specialty coffee feel welcoming.
