This coffee is a washed Gesha from Huila, Colombia, produced by Marlon Bolaños and his brothers Pedro and Hemerson at The Three Coffee Farmers project. The beans underwent an advanced washed process: submerged in cherry underwater for 48 hours, then drained and left to dry ferment for another 48 hours before being fully washed and dried on raised beds for 10-15 days. The cup displays intense juiciness with yellow florals, yellow fig, starfruit, mango, and complex citrus notes of grapefruit and pomelo. The Gesha variety is known for its delicate, tea-like qualities and expressive flavor profile.
Shoebox Coffee Roasters is a Chicago based micro roastery focused on light roast profiles that emphasize acidity, complexity, and fruit forward flavors. Founded by Maxwell, who previously roasted for Jimmy Beans, the operation is built around sourcing and small batch production. Shoebox conducts origin trips to build direct relationships with farmers, including work with Hacienda La Papaya in Saraguro, Ecuador, sourcing varietals like Mejorado, Sidra, and Geisha. New coffee drops are released every Sunday, roasted and shipped fresh.
