This coffee is a single origin from Palestina, Huila, Colombia at an altitude of 1400-1450 meters. It is a washed processed Bourbon Aji variety known for its aromatic, floral flavor profile with notes of berries, spice, and sugar cane. The processing involves 36 hours of cherry oxidation, 70 hours of submerged fermentation, followed by 12-15 days of traditional drying. The roast level is light.
