This coffee originates from the Peñas Blancas processing station in Acevedo, Huila, Colombia, established by second-generation producer Jhoan Vergara. It features the Geisha variety grown at 1650-1800 meters altitude. The coffee undergoes a complex Fermented Washed process with multi-fermentation stages (aerobic, must fermentation, and anaerobic), starting with cherries at 22-26° Brix sugar content. A thermal shock treatment stabilizes aromatic compounds, followed by mechanical drying to 11% moisture content and a two-week rest. The light roast showcases elegant bergamot and white peach flavors with juicy mandarin orange notes and a muscat juice and soda-like finish.
