About This Coffee

Grown by Libardo Chilito on his farm Finca La Esperanza in Guacacayo, Pitalito, Colombia, this Pink Bourbon lot showcases the farmer's dedication to quality and innovation. Libardo, a second-generation coffee grower, cultivates his Pink Bourbon trees at an elevation of 1,700 MASL, where cooler mountain conditions contribute to the slow development of sugars in the coffee cherry—yielding complexity and sweetness. His meticulous washed processing method includes a 36-hour anaerobic fermentation, double washing, and patio drying under controlled conditions for about 20 days. The Pink Bourbon variety—known for its floral, high-acidity cup quality—is a hybrid of Red and Yellow Bourbon. This coffee was roasted with filter brewing in mind and kept intentionally light to highlight its bright, fruity flavors. The roast brings out a clean, vibrant acidity and a silky body, perfect for enjoying without milk. The final flavor profile includes notes of peach rings, cherry cola, and blood orange.

Alma Coffee

Alma Coffee was founded in 2018 by Leticia Hutchins, a fifth generation Honduran coffee farmer, and her husband Harry, a veteran. The women owned, farm to cup operation manages the entire process from agriculture to roasting, working three family farms in Copan, Honduras: Finca Fer, Finca Don Victor, and Finca El Igureral. The farms hold USDA Organic, Fair Trade, and Smithsonian Bird Friendly certifications, the last of which confirms shade grown practices that provide habitat for migratory birds. Roasting takes place at a 3,500 square foot facility in Canton, Georgia, where the team uses two Loring Smart Roasters, a 15kg Falcon and a larger S35 Kestrel, making Alma the first roaster in Georgia to operate Loring equipment. Their range includes Natural Process, Honey Process, and Wet Wash coffees alongside cascara made from their own coffee cherries.
