This decaffeinated Colombian coffee comes from Finca Samaria in Belén de Umbria, Risaralda, located in the Western Cordillera. The farm sits at 1600 meters above sea level with average temperatures of 19 degrees Celsius and annual rainfall of 2263 mm. The coffee features Castillo and Caturra varieties and is processed using the Swiss Water method. The farm has been owned by the same family for four generations, starting in 1934 when Mr. Gerardo Escobar Mesa and Mrs. Enriqueta Ceballos purchased the land. The region's highly productive soils and heights between 1000-2000 meters provide optimal conditions for coffee cultivation. Tasting notes include brown sugar, almond, and shortbread.
Wasatch Roasting Company was founded in 2016 by Darren and Tonya Blackford after a trip to Costa Rica sparked their fascination with small scale coffee roasting. What started with a tabletop roaster has grown into an in house roasting operation in downtown Ogden, Utah, where the Blackfords roast specialty grade beans in small batches. The company sources from producers and importers who prioritize sustainable practices and fair compensation. Wasatch also doubles as a community gathering space, featuring rotating gallery exhibitions and work by local artists and artisans throughout the shop.
