About This Coffee

A Pink Bourbon variety from Finca Monteblanco in Huila, Acevedo, Colombia, grown at 1730 meters altitude by third-generation farmer Rodrigo Sanchez Valencia. Processed using a proprietary "cold washed" method, where pulped coffee is fermented in sealed GrainPro bags in an industrial fridge at 10–14°C for 76 hours, then washed and dried on parabolic and raised beds for 23–25 days. Cherry is selectively handpicked at 26–30 Brix degrees. Tasting notes include lemongrass and floral characteristics. Recommended for filter preparation.
