This microlot is a 100% Castillo varietal single origin from Quindío, Colombia, grown by Jairo Arcilla at 1450-1500 meters altitude. The coffee undergoes a specialized honey process featuring a 72-hour wet anaerobic fermentation with yeast and passion fruit pulp, followed by pulping and drying on raised beds mixed with dehydrated passion fruit. Tasting notes include passion fruit, oolong, and vanilla, with passion fruit most apparent in the aroma. City roast at 128.4 roast color.
