A Pink Bourbon from Finca Las Nubes, owned by Claudia Samboni, located near Aguas Negras, close to Pitalito in Colombia's Huila region. The farm sits atop a mountain overlooking the Laboyos valley at an altitude with daytime temperatures of 18–21°C. This lot underwent an anaerobic cherry fermentation for 200 hours followed by a full washed process: cherries are harvested at 25 Brix, fermented in sealed tanks for 100 hours, depulped, fermented for another 100 hours, then fully washed and dried on raised drying beds. Flavor notes include fruity candy, watermelon, and peach iced tea.
