Finca Cataluña is located in Pitalito, Huila, Colombia, and is managed by Flor Marina Betancourt and her family. This coffee is a Pink Bourbon variety grown at 1700 meters altitude. It undergoes a washed processing method, involving a 12-hour cherry fermentation followed by a 40-hour fermentation after depulping, and is dried in a greenhouse for 8 to 12 days. The cup profile is clean and juicy, featuring notes of berry compote, grapefruit mimosa, and a smooth lemon tea-like structure.

Regalia Coffee

Paolo and Chisato Malikski co founded Regalia Coffee in 2018 in Long Island City, Queens, building on work Paolo began in 2017 alongside coffee expert Scott Rao at the original Multimodal roasting facility. Paolo, a classical musician turned roaster and international roasting instructor, brings a meticulous ear for nuance to every batch. Regalia now operates from a 7,000 square foot facility called Multimodal, equipped with a Diedrich IR5, Mill City Roasters, and a Probat P25/2, serving both their own production and other roasters through shared access and toll roasting services. Their mission centers on lowering barriers to entry in the coffee industry while maintaining fair, sustainable sourcing practices. The roastery earned Gold at the 2025 Global Coffee Awards in the Filter/Experimental category.
