This coffee is from Aquiares Estate in Turrialba, Costa Rica, grown at 1200-1400 meters altitude. The variety is F1 Centroamericano, a hybrid of Sarchimor and Rume Sudan. The coffee undergoes anaerobic flower culture processing, where coffee flowers from a second flowering are fermented spontaneously in jars of distilled water and sugar for about a week. The resulting flower yeast is then used to ferment the coffee cherries anaerobically together with the flowers for two days before drying for 16-20 days. The farm was founded in 1890 on the Turrialba volcano. The cup profile features peach, guava, grape, nectarine, white tea, golden maple syrup with elegant characteristics and slightly funky fermentation notes in a balanced cup.
