This coffee is a SL28 microlot grown and processed by Oscar and Francisca Chacón in Sabanilla de Alajuela, on the slopes of the Poas volcano in Costa Rica. It is a red honey-processed coffee where the cherries are picked ripe, sorted, and pulped, with most of the mucilage left to dry on the seed. The beans are spread on raised beds and carefully raked twice daily until dry, taking 7-15 days. The coffee has tasting notes of red fruit, brown sugar, and a juicy character.
Founded in 2014 by Matija Belković and Hannah Powlison Belković, Cogito emerged from their pioneering cafe "Cafe u Dvoristu" when Zagreb had only two establishments serving quality coffee. The addition of Matija Hrkac—three-time Croatian Barista Champion and 2012 World Barista Championship finalist—transformed this courtyard venture into Croatia's leading specialty roastery. Their approach respects Croatia's deeply social coffee culture, where leisurely consumption remains paramount, while introducing international quality standards to a market long dominated by commercial roasting.
