This coffee is from the Alvarado Fonseca Family's Finca El Salitre in the Brunca region of Costa Rica, located at the foot of Cerro Chirripó at 1650-1950 meters altitude. The variety is Milenio F1, a hybrid of Sudan Rume and T5296 known for resilience and exceptional cup quality. The coffee undergoes a unique "natural reposado" processing method where cherries rest in sealed containers for short anaerobic fermentation before being slowly dried on raised beds and patios over several weeks. The Micromill Corazón de Jesús has earned placements in the Cup of Excellence for their experimental processing. Flavor notes include apple, orange, ripe pineapple, passion fruit, quince, spices, cocoa, dark chocolate, and malic acidity.
