This Gesha variety coffee is produced by Ivan Gutierrez at La Esmeralda farm in the Quebrada Grande area of Copey de Dota, Costa Rica. Grown at an altitude of 1960 meters, this coffee is processed using the honey method, where the parchment is dried with the mucilage intact. The cup profile is complex and floral, featuring tasting notes of honeysuckle, mango, and stone fruits, with a clean finish reminiscent of elderflower and candy.

Rebecca Grossman and Lucas Smith founded Ilse in 2019, starting with a thousand dollars and a rented roaster in Stamford before building out their own facility in a converted mechanic's garage in North Canaan.
