This coffee is from Costa Rica, produced by Iván Gerardo Solís Rivera at Cuatro Vientos farm and processed at Solis & Cordero Micromill in the Santos region. The Modulación Aromática Natural process involves washing cherries with clean water, followed by a 36-hour anaerobic fermentation in tanks, then slow drying on raised beds for 22 days until reaching 10% humidity. The mill was founded in 2018 to support smallholders through farm-level traceability and innovative processing methods. Iván Solís has over 20 years of coffee experience and has been a certified Q-grader since 2009, dedicating the last decade to experimenting with innovative processing techniques.
