It is processed using a Kenyan washed protocol, which involves depulping, overnight rest in open steel tanks, followed by a double-fermentation and washing process with cool, clean water. The first wash involves several hours of soaking, followed by a longer, colder second soak to break down remaining mucilage and refine acidity. The coffee is dried for 12 days on shaded raised beds with hourly turning. The flavor profile features bright florals, citrus notes, and refined sweetness, characteristic of both the Gesha variety and the Kenyan processing method.
