About This Coffee

Natural-processed coffee from Costa Rica, specifically from San Marcos in Tarrazú region at 1650m altitude. Grown on Finca La Esmeralda farm by farmer Minor Jiménez Abarca, using Caturra-Catuai varieties with extended natural processing. Light roast offering flavor notes of red grape, apricot, plum, praline, and fresh mint with a lingering aftertaste. Known for sweetness and cupping scores exceeding SCA 85.

Ief & Ido

Ief & Ido is a specialty roastery in The Hague, the Netherlands, founded in 2018 by the father and son team Ido and Ief. Ido had been home roasting for over 15 years, at one point pulling shots on an original Faema E61, while Ief discovered specialty coffee through an espresso in Berlin that led him to study the craft across several countries. Together they roast on a Giesen W15 in an old industrial building in The Hague's southwest, combining hand regulated control with modern monitoring technology. Sourcing runs directly from farmers beyond Fairtrade standards, with fully traceable single origins from Brazil, Colombia, Guatemala, Ethiopia, Costa Rica, Kenya and Mexico, each listed with processing method, tasting profile and body and acidity ratings. Ief & Ido supplies over 50 locations in the region including Michelin starred restaurants and the concert venue Paard van Troje, and delivers locally by cargo bike.
