The San Isidro 48 varietal benefits from cooler temperatures and slow cherry maturation, yielding high sugar development and dense, well-structured beans. Processed using a natural anaerobic method — ripe cherries are fermented in oxygen-free tanks, then slowly dried on raised beds. The cup opens with dark cherry and ripe strawberry notes, followed by cocoa nibs and deep molasses-like sweetness. The body is dense and rounded with a long, balanced finish.
