This coffee is from Costa Rica's Valle Central region, specifically from Hacienda Sonora, produced by Diego Guardia. It is grown at an altitude of 1200-1300 meters and processed using the honey method. The varieties are Bourbon and Catuai, both Coffea arabica. The coffee features aromatic notes of stone fruit and honey with considerable sweetness and interesting aromatic complexity. Pouponne & Loulette is an artisanal specialty roastery based in Fribourg, founded by Camille, a former forensic scientist who left her career to pursue coffee. The story began when she bought a small roaster for home use, then trained with roasters in Basel and Copenhagen before striking out on her own. Her roastery operates within the restaurant Les Menteurs, where she carefully selects beans for their flavor qualities and adapts her roasting to each coffee's origin and fermentation process. The focus is on traceability, fair producer compensation, and environmentally responsible production. Pouponne & Loulette offers freshly roasted specialty coffee for both espresso and filter preparation, in whole bean or ground. It is a personal, hands on operation shaped by curiosity and a commitment to doing things with integrity.
