This SL-28 coffee is from Volcan Azul farm in West Valley, Costa Rica, cultivated at 1600 meters elevation. The variety was grown from Kenyan SL-28 seeds now thriving in Costa Rican soil. The beans underwent 5 days of anaerobic fermentation in sealed tanks at 18°C until reaching a final brix level of 14, followed by 2 days of patio drying and approximately 88 hours of mechanical drying. Flavor notes include cherry, kiwi, violets, and mulled wine.
