About This Coffee

This coffee comes from Finca Los Cedros in the El Paraiso region of Honduras, grown by 3rd generation farmer Danilo Sanchez at 1,350–1,500 MASL. The variety is Parainema, processed using an advanced natural method: cherries are harvested at peak ripeness, undergo a 50-hour anaerobic fermentation in plastic bags, then sun-dried for 20–25 days under a plastic cover. Roasted light (Agtron 89), the cup presents with bright acidity, excellent flavour separation, and notes of plum, strawberry, and maple syrup.
