A natural decaf coffee from producer Nestor Lasso in the Bruselas region of Colombia, grown at 1850m altitude. The Ombligon botanical variety undergoes an extensive fermentation protocol including anaerobic fermentation, submerged fermentation with lixiviate recirculation, and thermal shock, followed by controlled drying. Decaffeinated at Descafecol using a natural process. The cup is very sweet with tasting notes of strawberry and chocolate, recommended primarily for filter preparation but also suitable for espresso.
Luka Banović founded this remarkable micro roastery in 2018 at just 17 years old, driven by his frustration with bitter coffee and Slovenia's shortage of specialty roasters. His approach centers on light-roasted filter coffees that showcase unique flavors and aromas, with a mission to enable as many people as possible to drink fresh, quality coffee oriented towards sustainable development. Banović roasts about 200kg monthly from his Ljubljana facility, shipping single-origin selections across the EU while maintaining direct relationships with farmers and prioritizing environmental protection in every aspect of production.
