About This Coffee

This decaffeinated coffee is from Colombia's Huila region, produced by Grupo Martír, an informal association of neighboring small farms near La Plata. The farms range from 1700-2000 meters elevation, growing Caturra, Castillo, and Colombia varieties. The coffee undergoes a distinctive washed fermentation protocol with low-oxygen fermentation for 36 hours in sealed barrels, then mechanical depulping and underwater fermentation for 24 hours before drying. The lot is a blend from multiple member farms, decaffeinated using the sugar cane ethyl acetate process. The coffee offers notes of baked apple, cherry, and brown sugar with a sweet and fruity profile.
