About This Coffee

A mountain water decaffeinated coffee from Mexico, sourced from the Chiapas region at 1100–1300 meters altitude. Produced by Descamex and decaffeinated using glacial water from Pico de Orizaba, achieving over 99% caffeine extraction without chemical inputs. Certified organic, shade-grown, aerobically fermented, traditionally washed, and air-dried. Varieties include Bourbon, Catimor, Garnica, and Typica. Roasted to a medium-light level. Flavor notes include brown sugar, plum, stone fruit, and cereal. Suitable for both espresso and filter brewing.

Synapse Torrefaction

Founded in 2022, Synapse Torréfaction is a Parisian micro roastery that splits its operations between a roasting atelier in the Cour Damoye near Bastille and a coffee shop at 2 Rue du Fer à Moulin in the Latin Quarter's 5th arrondissement. The shop opened its doors in May 2023, giving the young brand a public face to complement its production space. The name evokes neural connections, fitting for a roastery that emphasizes the intellectual and sensory dimensions of specialty coffee. Workshops and educational programming are central to their mission, inviting customers to engage with coffee at a deeper level than the typical cafe experience. Despite being one of Paris's newer roasting operations, Synapse has quickly carved out a niche among drinkers who value precision and transparency in their cup.
