About This Coffee

This coffee is from Finca El Carbonero, a 1.5-hectare farm in Sevilla, San Agustin, Huila, Colombia, grown at 1860 meters altitude. Producer Didier Galindez grows Yellow Caturra and Pink Bourbon varieties, with this lot being the first harvest from his Pink Bourbon trees planted in 2021. The coffee undergoes washed processing with extended fermentation: 24-hour fermentation in wooden tanks, followed by depulping, 48-hour dry fermentation in majolica tanks, and 15-20 days of drying on beds. The flavor profile features pear, strawberry milk, floral notes, and white chocolate. Medium-light roast level.

The roastery takes a deliberately accessible approach to specialty coffee, rejecting the solemnity that sometimes surrounds the craft in favor of straightforward enjoyment. Roasting is precise, using Cropster software with three thermocouples for exact temperature monitoring, and sourcing is ethically driven with a rotating seasonal lineup. Have Fun is a roaster that pairs professional rigor with an easygoing attitude, proving that taking coffee seriously and having fun doing it are not mutually exclusive.
