About This Coffee

Dimitri Croaker is a washed Heirloom espresso coffee from the village of Kuburta in Chiré, Sidama, Ethiopia. Grown at 1,950 MASL, the cherries are delivered by smallholder farmers to the Nibret Alamu washing station, operated by family-owned exporter ASK. The coffee offers a polished espresso profile with tasting notes of Red Apple, Caramel, Whisky, Nutmeg, and Honey — complex, clean, and bright.

Groundstate Coffee Roasters

Andy, a scientist, and Mark, a yogi, founded Groundstate in 2018 as a cafe and yoga studio in Dublin's Liberties neighborhood before adding a dedicated roastery in September 2021, built around a Giesen W15A drum roaster. They source single origin beans from small producers through specialty importers, roasting with 100 percent renewable energy and packaging in fully compostable materials. Groundstate's environmental commitments run deep: they partner with Hometree to plant two native Irish trees for every sack of green coffee purchased, working toward carbon neutrality, and donate one percent of profit to Clean Coasts to help protect Ireland's shoreline. The cafe itself reflects a philosophy of local sourcing beyond coffee, using vegetables from McNallys family farm in North Dublin, sourdough from Firehouse Bakery in Delgany, and free range eggs from North Wicklow. What began as an unusual pairing of coffee and yoga has evolved into a roastery that treats sustainability not as a marketing angle but as the foundation of every operational decision.
