This coffee is a single origin from the Los Santos region of Costa Rica, grown at 1700 meters altitude on Leo Garro's farm in San Isidro, León Cortés. It is a White Honey processed coffee made from Catuai variety cherries. The White Honey method uses a Penagos Eco-pulper with mechanical demucilager, removing most mucilage before drying for a clean, refined cup with balanced sweetness, elegant acidity, and smooth, silky body. The lot earned a cupping score of 86.5 points.
Founded in 2017 by Prague coffee veterans Ondřej Štoksa, Zdeněk Hýbl, and Jaroslav Slámečka along with two other colleagues, Candycane roasts coffee that captures both the logo and taste of a candy cane. The team runs the popular OneSip café in Prague's Old Town while producing their podcast between roasting shifts. Zdeněk believes Prague's coffee scene benefits from working with less advanced equipment, which forces roasters to think more carefully about the coffee itself, resulting in better preparation skills and a refreshingly unpretentious approach compared to established specialty coffee capitals.
