About This Coffee

This coffee is from Pillcocaja farm in the Azuay region of Ecuador, grown at 1650-1700 meters above sea level. Produced by Ana Maria and Nicolas Eduardo Crespo, it features the Typica variety processed using anaerobic fermentation for 120 hours in a stainless steel tank, followed by slow drying for 25-30 days. The 2025 harvest delivers flavors of strawberry syrup, honeydew, pomegranate, violet, and dates.
