El Diamante is a Pink Bourbon variety coffee from Montenegro, Quindio, Colombia, grown at 1400 meters elevation. The coffee undergoes an advanced experimental process: 48-hour anaerobic fermentation in whole cherry, followed by depulping and 48-hour mucilage fermentation, then 96-120 hour extended fermentation with yeast, and thermal shock treatment with hot water (45-60°C). The beans are dried on African beds for 15 days. Flavor profile features lemongrass, white lilac, citrus, orange, lime, and tangerine notes with a milky texture.
