About This Coffee

This is a single-origin coffee from Huila, Colombia, grown at 1850 meters altitude by producer Néstor Lasso at El Diviso farm. The coffee features the rare Bourbon Aji variety and undergoes a distinctive Thermal Shock Anaerobic Washed process involving 40-hour anaerobic fermentation, oxidation phases, and a thermal shock wash with 65-70°C water. Light roasted, it displays vibrant flavor notes of peppermint, lychee candy, and mango lassi with aromatic complexity.
