This coffee is a Pacamara variety from the El Manantial farm in the Dipilto region of Nueva Segovia, Nicaragua, grown at an altitude of 1500 meters. Produced by Samuel Zavala, this small-lot coffee undergoes a natural process with a light pre-fermentation, which can be classified as anaerobic fermentation, followed by drying on raised beds. The resulting cup is clean and elegant, featuring distinct flavor notes of toffee, pineapple, and strawberry.
